1 – 10 oz package – Fresh Spinach Leaves
4 each – Chicken Breasts (boneless and skinless) – pounded to 1/2 inch thickness
4 cloves – Garlic (minced)
½ cup – John’s Famous® Slaw Dressing
½ cup – Colby or Monterey Jack, shredded
8 slices – Bacon
1 tablespoon – Black Pepper
Preheat oven to 375 degrees. Place spinach in a large glass bowl and heat in a microwave for about 3 minutes (stirring every minute or so) until wilted, then stir in the John’s Famous® Slaw Dressing, cheese, pepper and garlic until blended evenly. Lay the chicken breasts on a clean flat surface and spoon the spinach mixture onto each one. Roll the chicken breasts up and wrap each one with 2 slices of bacon and secure with toothpicks. Arrange chicken breasts in a shallow baking dish and lightly salt and pepper them and bake uncovered for 35 minutes and then increase the heat to 500 degrees (or use your oven’s broiler) for another 5 to 10 minutes to brown the bacon.
